Pork belly, aka meat candy, aka the best bite in BBQ? This rich tender bite goes perfectly with the heat you can pack in your favourite Maritime Madness Hot Sauce. The options for flavour combinations are endless but the combination of sweet and spicy is like a match made in heaven. This recipe features our Sweet Chipotle BBQ Rub, Fiery Chipotle Hot Sauce and the Bold And Smokey BBQ Sauce.
Ingredients

Pork Belly, skinless

Sweet Chipotle BBQ Rub

Fiery Chipotle Hot Sauce

Bold and Smokey BBQ Sauce

2 tbsp brown sugar
-
3 tbsp butter
Directions
Cut up pork belly into 1" cubes (helps if you put it into the freezer for 30 minutes beforehand)
Coat pork belly in Fiery Chipotle Hot Sauce and Sweet Chipotle BBQ Rub.
Smoke your pork belly cubes between 225°F - 250°F until approx 180°F internal flipping halfway through.
Toss the pork belly into a pan with your butter, brown sugar, more rub and all your sauces. You want to coat everything in sauce but not bathing in it.
Toss back on the smoker until tender and you're ready to serve.
