We teamed up with @betterthanyomamascookin to bring you this delicious smoked chicken sandwich recipe featuring our Sweet Chipotle Rub.
The Smoked Chicken Caprese Sandwich is a mouth-watering treat featuring smoked chicken breasts with our Sweet Chipotle Rub, mozzarella pearls, fresh tomatoes and basil, a toasted ciabatta bun, and a yummy balsamic glaze drizzled on top.
Mix it up and try it with any of our rubs and drizzle with our Moonshine Habanero Grilling Sauce for a bit more kick!
4 chicken breasts
Oakland Dust Himalayan salt & pepper rub
Maritime Madness Sweet Chipotle Rub
4 Ciabatta rolls
2 cups Arugula
1 tbsp olive oil
2 tbsp balsamic vinegar
1 shallot, diced
2 cups Grape tomatoes, halved
5 basil leaves, chopped
1 cup mozzarella pearls
2 garlic cloves
Salt and pepper to taste
Season your chicken breasts all over with your Oakland Dust Himalayan salt and pepper and Maritime Madness Sweet Chipotle rubs.
Set your @traegergrills to 165 degrees and smoke your chicken for 20 mins. Bump the heat to 350 and cook for an additional 35 mins (or until the internal temp reads 165 degrees).
Remove and let rest.
To make the Caprese salad, get a mixing bowl and add your mozzarella, tomatoes, shallot, garlic, salt, pepper, basil, balsamic vinegar and olive oil. Mix well.
Toast your ciabatta rolls and assemble with your chicken breast, arugula, and Caprese salad. Drizzle with balsamic glaze & enjoy!
