Philippine-Style Mussel Soup

If you're looking for a way to enjoy mussels without butter - this is the recipe for you! The broth is EVER-Y-THING, rich and cozy and a perfect compliment to the yummy mussels!
Ingredients

2lb mussels

One stalk lemongrass
-
2 tbsp olive oil

1/2 cup thinly sliced shallots

3 cloves of garlic, minced

1 tbsp finely grated ginger

1/4 tsp salt & pepper

3 tomatoes
-
3 cups water
-
1/2 cup Garlic Goodness Hot Sauce
-
1 tbsp fish sauce
-
2 cups lightly packed spinach
-
3 tbsp lime juice
Directions
In a heavy saucepan, sauté shallots until golden. Add garlic, and fry until golden.
Cut lemongrass in 2-inch pieces, and add along with diced fresh tomatoes and sauté until softened, about 2 minutes.
Stir in water, Garlic Goodness Hot Sauce, and fish sauce, bring to a boil.
Add mussels, and cook until open. Remove from heat, stir in lime juice and salt. Dig in!
