Black Bean Ginger Tofu Stir-Fry with Turmeric rice

This stir-fry is a healthy meal that's quick to prepare. You can adjust the heat level and use any selection of veggies you like, it's also delicious made with chicken, pork or beef.
Ingredients

1/2 lb firm Tofu, cut into cubes

1 tbsp olive oil

1/4 cup red onion, diced

1/2 each green + red peppers, diced

1/2 cup chopped cabbage (green or red)

1 carrot, peeled and julienned
-
handful of broccoli florets
-
2 cups cooked Turmeric rice *see instructions below

1 tsp black sesame seeds

2 tbsp soy sauce
-
1 tsp sesame oil

1 tbsp Simple Black Bean + Ginger Hot Sauce (or more if you want it to be spicier!)

2 cloves garlic, crushed

1/2 inch chunk of ginger, peeled and grated
Marinade
Directions
Stir all marinade ingredients together in a medium bowl, add the diced tofu and set aside for 1-4 hours.
Heat olive oil in a Wok over med-high heat, adding onion first, then carrot + broccoli followed by remaining veggies. Stir-fry for 5 mins, until veggies are al dente. remove from Wok and set aside.
Dump tofu into Wok (with marinade) and fry over med-high heat for 5 mins, or until browned.
Add veggies back into Wok with tofu and mix together.
Serve over Turmeric rice, topped with black Sesame seeds and a drizzle of Black Bean Ginger hot sauce and enjoy!
For Turmeric rice you will stir 1 TBSP Turmeric powder into 2 cups of water and 1 cup of Basmati rice, bring to a boil, reduce heat to low and simmer with lid on for 15 mins.
