Spicy Bourbon Bacon Jam
Burgers are possibly the most popular thing you'll see at any BBQ in the summer. If you want to be the talk of the neighbourhood then this bacon jam recipe will certainly make that happen. Sweet and spicy with a sticky bacon that hammers your taste buds with flavour every time you take a bite. Best part is, it comes together in one pan and anyone can do it.
Cut bacon down into small cubes and put into a cold pan. Turn heat up to medium low and cook slowly until crispy and all fat is rendered out.
Remove bacon and add onion, cook it down until caramelized.
Add in the brown sugar, bbq sauce, seasoning, thyme, balsamic vinegar and bourbon and cook it down until reduced to jam-like consistency. Re-add bacon to the mixture.
If you want to flambé the bourbon, make sure you are outdoors and careful where you put your eyebrows. You will want to get the pan sizzling and hit it with a flame. The bourbon should ignite and let it burn until it goes out. Do not blow on it.
Assemble onto your burgers and wait for the compliments to start rolling in.
