Ingredients

Mini flour tortillas

200g cheddar, shredded

4 large eggs, beaten

2 tbsp milk

2 fresh jalapeno, diced

3 cloves garlic, minced

4 slices canned pineapple, drained and chopped (you can use frozen or fresh pineapple just try to remove as much moisture as possible)

2 cups Hash brown potatoes

3 tbsp butter

Directions
On medium heat in a skillet or flat top griddle, melt 2 tbsp butter and pour out the hash browns. Once they've started to thaw, coat them in your favourite fry seasoning, I use Maritime Madness Louisiana Cajun BBQ Rub. Cook until crispy.
On medium low heat, in another skillet or on the same flat top griddle, cook garlic until fragrant then toss in the jalapeño and pineapple. You want to cook until jalapeño is caramelized which won't happen if it needs to evaporate a bunch of moisture.
In a pan, with 1 tbsp butter, milk and your eggs, make scrambled eggs. Season with salt and pepper.
Sprinkle a small handful of shredded cheese down on the skillet and cover with a Tortilla. Once cheese is melted throughout and starting to get crispy on the exterior it's time to flip. The goal is to have melty cheese on the interior and crispy bits on the outside.
It's time to assemble. First, on your cheesy Tortilla, a healthy drizzle of the Maritime Madness Mexican Mole. This step and ingredient is non-negotiable. Then crispy hashbrowns, pineapple jalapeño salsa, scrambled eggs and then another drizzle of the Mexican Mole.
