Ingredients

4-6 large potatoes – Sliced about ¼ inch thick

2 Tbsp Olive Oil

1 teaspoon dried rosemary

1 teaspoon dried thyme
-
1 teaspoon Mighty Mesquite Rub

Salt and pepper to taste

1 cup Sharp Cheddar Cheese

½ cup Irish cheddar

Super Sauce, as desired

4-6 slices bacon – cooked and chopped finely

3 green onions – thinly sliced

1 Tbsp fresh thyme
-
Candied Jalapeño, drizzle

Directions
Scrub potatoes and slice to approximately ¼ inch think. Place in cold water and soak for around 30 minutes. Pat dry with paper towel or tea towel.
Meanwhile, preheat oven to 450 degrees F. Or an airfryer to 400 degrees F
In a large bowl, add potatoes, olive oil, rosemary, thyme, Might Mesquite, salt, and pepper. Toss to coat. (You can add any other spices or rubs you desire during this step as well)
If using an oven, place the potatoes on baking trays in a single layer. Bake for 20 minutes. Flip potatoes, and bake for another 20 minutes. (if using more than one baking sheet rotate between racks to ensure a more even bake.) Keep an eye on potatoes, they can get crispy quickly!
If using an airfryer, place potatoes in a single layer and bake for 25-30 minutes until crispy.
Place crispy potatoes in a large oven safe skillet or baking dish. Top with cheese and bacon, a drizzle of Super Sauce making sure to layer as desired. Return to oven for 3-5 minutes until cheese is melted and bubbling slightly. (broil under high for 1-2 minutes if you like a little crisp to your cheese as well)
Top with green onion, fresh thyme, and a drizzle of Candied Jalapeño hot sauce.
Serve salsa and sour cream dolloped on top, or on the side.
