Phase 1 – Structure
225°F + Super Smoke ON
2.5 hours
Unwrapped
Phase 2 – Over-Braise
Increase smoker to 250°F
Wrap tightly in foil
Add
2 tbsp butter
2 tbsp apple juice
1 tbsp honey
Cook 1 hour
This creates a braising environment and breaks down the meat fibers.
Phase 3 — Finish
Unwrap
30 minutes at 250°F

RACK B – THE FIX (TENDER, NOT MUSHY)

Increase smoker to 250°F
Turn Super Smoke OFF
Stay unwrapped
Cook until:
Probe slides in with slight resistance
Internal feel ≈ 195–200°F
